Cooking in the kitchen produces a variety of odors, some pleasant and some unpleasant, as well as smoke. Fan:

When buying new range hoods the fan is one of the most important factors to consider. You have the choice between a rotary fan and a barrel shaped fan. The barrel shaped variety is usually able to shift more air and is also more quieter. If you are on a budget, however, the rotary fan is the cheaper option which is still a highly effective piece of equipment. Being able to change the speed of the fan is important.

CFM:

The next consideration is the CSM rating of the hood. These three letters stand for cubic feet per minute and reflect the amount of air the hood can move. A higher rating means that the hood can move more air per minute and so provide better ventilation and clean air within the kitchen.

Lighting:

A useful feature to have in the hood is lighting. It provides another source of lighting in the kitchen and it enables you to actually see what you are doing. Most hoods have one or two bulbs fitted. They are often either incandescent types or halogen.

Size:

One of the important things you need to think about is the size of the hood. To work effectively it needs to be as wide as the cooking surface or range. If not, you will find that it will not remove the odors and fumes, from the cooking, as effectively. Prior to going out and making a purchase, measure the size of the range.

Exhaust:

The exhaust system or what the hood does with the air is the next consideration. Some use a duct to transfer the air away from the hood and out through a vent in an external wall into the outside world. An alternative is the ventless system that does not have ducts but uses filters to clean the air. The cleaned air is then circulated back into the kitchen. Some types uses a combination of these two methods.
